Homemade Fish Buns

Homemade Fish Buns

Homemade fish buns can be healthy. You can adapt this bun recipe to your own taste.

                             

Ingredients

  • FOR THE DOUGH:
  • ½ pounds, ⅞ ounces, weight Plain Flour
  • ¼ ounces, weight Yeast
  • 1 ounces, weight Sugar
  • ½ teaspoons Salt To Taste
  • 7 tablespoons, 1 teaspoon, 5-⅛ pinches Warm Water
  • 1 whole Egg
  • 1 ounces, weight Butter, Softened
  • _____
  • FOR THE FILLING:
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Garlic, Chopped
  • 2 Tablespoons Red Onion, Chopped
  • 5-⅓ ounces, weight Smoked Salmon, Crumbled
  • 3-⅝ ounces, weight Mashed Potatoes
  • 1 teaspoon Pepper
  • 1 teaspoon Salt To Taste
  • 1 Tablespoon Sesame Seeds, For Garnish

Preparation Instructions

In a mixing bowl combine flour, yeast, sugar, and salt. Mix 1 minute. Next add water and half of the beaten egg. Mix. Add butter until combined. Knead by hand until smooth and elastic, about 10 minutes.
Cover the dough and let rise in a warm place for about 30 minutes. After that, punch the dough down and make 8 round balls and allow them to rise for 10 minutes .
Now take out each ball and roll out with a rolling pin until you get a thin disk (diameter 5 inch, thickness 1/4 inch).
In a pan heat 1/2 table spoon olive oil over medium high heat add garlic and mix. Next add onion, salmon, and mashed potatoes. Mix until onion is softened and everything is heated through. Add pepper and salt. Mix well.
Now place a tablespoon full of filling mixture in the middle of each disk. Fold the edges of the disk in three places to cover the filling.
Place the fish buns on a greased baking tray and allow to rise for 35 minutes. Next brush the remaining beaten egg over the fish buns and sprinkle some sesame seeds on top.
Bake at 200 C for 20 minutes or until golden brown.
Serve with tomato sauce.

Homemade Party Appetizer

If you need an appetizer recipe for your next kids’ party, try my recipe.
                                              
                                                            
  • 2-⅔ ounces, weight Flour, All Purpose
  • ¼ teaspoons Salt
  • 1-¼ ounces, weight Butter, Chilled
  • ¼ whole Egg Yolk, Beaten
  • 2 tablespoons, 1 teaspoon, 1-⅝ pinches Water Cooled
  • 12 whole Chicken Or Similar Veggie Or Fish Nuggets (can Be Purchased From The Grocery Store)

Preparation Instructions

Sift the flour. Place the flour and salt in a large bowl. Mix. Rub the butter into the flour with your fingertips until the mixture resembles breadcrumbs.
Next add approximately 1/4 of the beaten egg yolk and also add the water. Mix well your hands. Try to work quickly.
Wrap the dough in plastic wrap and chill for 10 -15 minutes.
Now take the chilled dough and roll out into a 10 inch square that is about 1/8 inch thick, using a rolling pin.
Next prepare the nuggets as per the packet instructions. (I used homemade cutlets). Let cool.
Next cut the dough. You need two dough cutters – one beak/ head/neck shaped cutter and one wings shaped cutter. If you don’t have cutters draw a shape on a piece of paper and cut it out . Place the pattern on top of the dough and cut it out with a sharp knife. You’ll need to cut out 12 beak/head/neck shapes and 24 wings.
Next place them on a greased baking tray and bake about 7 minutes at 180 C degrees or until the crust is light brown. Remove from oven and let cool.
You are ready to decorate. Make three holes in the nuggets using a toothpick. Then stick in the wings and neck, pressing down to seal. I’ve done this in the photo above.
After that, you can decorate the duck shaped appetizer with eyes and mouth/beak. I’ve done so in the photo using food coloring for the eyes and mouth/beak.

Homemade Breakfast Pizza

Homemade Breakfast Pizza

Homemade pizzas can be healthy. You can adapt this pizza recipe to your own taste. 


                         STEP BY STEP RECIPE
                                  

                                    
                                      


  • 1-½ Tablespoon Olive Oil
  • 1 teaspoon Garlic Chopped
  • 50 grams Carrot, Sliced
  • ½ teaspoons Pepper
  • ½ teaspoons Salt To Taste
  • 100 grams Smoked Salmon, Sliced
  • 200 grams Pizza Dough (enough For 1 Pizza Base)
  • ½ cups Pizza Sauce
  • 25 grams Green Onions, diced
  • 125 grams Tomatoes,sliced
  • 3 whole Eggs

Preparation Instructions

In a pan heat one tablespoon olive oil over medium high heat add garlic and mix until it softens just a bit. Next add carrots, pepper and salt. Mix until carrots soften a bit. Add in the sliced salmon just to heat it up. Mix well.
Clean a dry working surface and roll out pizza dough (I used hand kneaded dough) to 1/4 inch thick (using a rolling pin). Next place it on the 9 inch diameter pizza pan (you can use a little olive oil to lightly grease ). Cover with a damp tea towel and leave in warm place for 20 minutes or until the edges rise slightly.
After that build a little rim/crust around the edges with your fingers. Prick the crust with a fork at a few places.
Now spread pizza sauce over the dough (everywhere except the crust). Put salmon mixture on top. Next scatter onions and tomatoes.
Beat two eggs until light and frothy. Now pour the eggs over the pizza (but not on the crust). Whisk the third egg and brush on the edge/crust.
Bake the pizza for about 25 minutes at 220C degrees or until the crust is golden brown.
Serve and enjoy.

Homemade Apple Jam Bread

Delicious apple jam bread recipe – and so easy to make.                             
                                             
  • 250 grams Plain Flour
  • 5 grams Yeast
  • 25 grams Sugar
  • ½ Tablespoons Salt
  • 110 milliliters Warm Water
  • 1 whole Egg, Beaten, Divided Use
  • 25 grams Butter, Softened
  • ½ cups Apple Jam
  •  
  • In a mixing bowl combine flour, yeast, sugar, and salt. Mix for 1 minute. Next add water and half of the beaten egg. Mix. Add butter and mix until combined. Knead by hand until smooth and elastic, about 10 minutes.
    Cover the dough and let it rise in a warm place for about 30 minutes. After that, punch the dough down and make a large round ball and allow it to rise for 10 minutes longer.
    Now take out the dough ball and roll it out with a rolling pin until you have roughly a 12 x10 inch rectangle that is about 1/4 inch thick.
    Place the apple jam across the dough. I used homemade apple jam but store bought is fine. Spread it across the surface of the dough but leave about a 1 inch border around the entire rectangle – so the jam doesn’t ooze out. Roll the dough up into a log. Cut the log into 7 equal slices using a sharp knife.
    Place the dough slices in a greased baking pan. I staggered them, placing the cut sides beside each other and shaped the dough into a wheat stalk shape. I’ve done this in the photo above.
    Allow to rise for 10 minutes. Next brush the remaining beaten egg over the top of the bread.
    Bake at 200 C for 20 minutes or until golden brown. Serve and enjoy.

Homemade Sunflower Cake

When planning your next party, try this sunflower shaped cake recipe. 
                                                         

                                                       



                                                     
                                             


  • FOR THE CAKE:
  • 150 grams Cake Flour, Sifted
  • 1-½ teaspoon Baking Powder
  • 75 grams Butter
  • 6 whole Eggs (separated)
  • 200 grams Sugar
  • 1 teaspoon Vanilla
  •  _____
  •  FOR THE BUTTER CREAM FROSTING:
  • 250 grams Butter
  • 500 grams Icing Sugar
  • 2 Tablespoons Milk
  • 1 teaspoon Vanilla
  • 2 drops Food Coloring Yellow (for The Light Yellow Frosting Portion)
  • 3 drops Food Coloring Yellow (for The Dark Yellow Frosting Portion)
  • 2 Tablespoons Chocolate Candy Or Sprinkles, For Decorating

Preparation Instructions

For the cake:
Sift the flour and baking powder three times. Set aside.

Melt the butter in a small pan over low heat. Once melted, remove from heat and let cool. Set aside.
Separate the egg whites and yolks. Beat egg whites until they become white and frothy. Add sugar little by little and continue beating until sugar dissolves.
Next add the egg yolks and beat about 5 minutes. After that, add in the dry ingredients, melted butter, and vanilla. Mix well using a rubber spatula.
Pour the cake batter into an 9-inch sunflower shaped cake pan that has been greased with butter and floured.
Preheat oven to 180 C degrees and bake the cake for 25 minutes.
The cake is ready when you can lightly press on it with your finger and it bounces back.
Remove the cake from the oven and let cool before decorating it. When the cake is cool, invert it onto your serving platter and peel off the top crust (just the outer crust) of your cake.
For the frosting: Using an electric mixer, beat butter in a bowl until pale. Gradually add icing sugar and milk, beating constantly until combined. Add vanilla . Mix. Divide into two portions. Add food coloring to each portion (2 drops in one, 3 drops in the other). Mix well.
Fill pastry bag (piping bag)with the butter cream frosting and pipe onto the cake. (Use star nozzle). Next place chocolate candy in the center of cake (for the sunflower seeds). I’ve done in the photo above.

Homemade Sweet Buns

                          These buns are very sweet and delicious. This is a kid friendly recipe.
            
  • FOR THE DOUGH:
  • 250 grams Plain Flour
  • 5 grams Yeast
  • 25 grams Sugar
  • ½ teaspoons Salt To Taste
  • 110 milliliters Warm Water
  • 1 whole Egg, Beaten, Divided Use
  • 25 grams Butter, Softened
  • _____
  • FOR THE FILLING:
  • ¼ cups Strawberry Jam
  • ¼ cups Candied Mixed Fruit
In a mixing bowl combine flour, yeast, sugar, and salt. Mix 1 minute. Next add water and half of the beaten egg. Mix. Add butter and mix until combined. Knead by hand until smooth and elastic, about 10 minutes.
Cover the dough and let rise in a warm place for about 30 minutes. After that, punch the dough down and make 8 round balls and allow them to rise for 10 minutes .
Now take out each ball and roll out with a rolling pin until you get a thin disk (diameter 3 inch, thickness 1/4 inch).
Place some strawberry jam and sprinkle some candied mixed fruit on the top of the disk. Then wrap and cover the filling from all sides with the dough. Then, pinch the seams to close. Next shape the dough into a ball shape. Using sharp scissors, snip the top surface of the dough a bit to form petals to shape it like a flower (see photo)
Place buns on a greased metal tray and allow them to rise for 20 minutes. Next brush the remaining beaten egg over the top of the buns.
Bake at 200 C for 20 minutes or until golden brown.
Enjoy.
