HOMEMADE MINI BREAD.

 Ingredients

160  grams wholewheet flour, 

 

9 grams butter


3 grams salt


3 grams yeast, active dry


80 millilitres water


9 grams sugar


Directions


In mixing bowl combine flour, sugar, yeast, and salt, mix on low speed for one minute.


Add water and mix on low speed for one minute.


Combine butter and kneed until smooth and elastic, about 10-15 minutes at medium speed.


Cover dough with towel and let rising at a warm place until volume double size.


Punch the dough down and in to greased  loaf pan, allow to rise for one hour.


Bake at 200C degree for 35 minutes.

Homemade Twist Bread

WELCOME

This Twist Bread is a beautiful and impressive loaf of bread to serve to guests. An egg wash gives the top of this soft bread a nice golden look.



FOR THE DOUGH

300 Grams Plain Flour
12 Grams Butter
6 Grams Salt
6 Grams Yeats
175 Ml Water
12 Grams Sugar
1 large eggs

FOR THE EGG WASH
1 large egg
2 tsp. water

DESCRIPTION 

Instructions
In a medium bowl whisk together the flour, yeast, sugar, and salt.
In the bowl of a stand mixer fitted with the dough hook, mix together the 2 whole eggs and 1 egg yolk, melted butter, and 1/2 cup of the water until combined.
Gradually add the flour mixture. Increase the speed to medium and mix until the dough comes together.
Knead for about 5 minutes, or until the dough is smooth and elastic, adding up to a 1/4 cup more flour if the dough is too wet and sticky.
Mix the egg white and the remaining 1 tablespoon of water and cover and refrigerate until ready to use.
Shape the dough into an even ball and place in a lightly oiled ball.
Cover with plastic wrap and let rise until doubled in size, about 1 1/2 to 2 hours.
Gently press down on the dough to deflate it then cover with plastic and let rise until doubled again about 40 to 60 minutes.
Transfer the dough to a floured work surface. Divide the dough into 2 pieces, one about half the size of the other.
Divide the large piece into 3 equal portions. Roll each portion into a 16-inch long rope.
Line up the ropes and pinch them together at one end. Braid the rope pieces, pinching the other end together to seal the braid.
Place the braid on a parchment or silicone mat-lined baking sheet.
Repeat the exact steps with the remaining 3 smaller pieces of dough.
Brush egg washes onto the large braid then carefully place the smaller braid on top.
Loosely drape the loaf with plastic wrap and let rise until puffy, 30 to 45 minutes.
Meanwhile, adjust an oven rack to the lower-middle position and preheat to 375°F.
Brush the loaf with the remaining egg wash.
Bake for 30 to 40 minutes, or until the loaf is golden brown.
Let the loaf  cool. Enjoy.

HOMEMADE WHOLE MEAL BREAD

Ingredients
300 Grams whole meal flour
12 Grams Butter
6 Grams Salt
6 Grams Yeats
175 Ml Water
12 Grams Sugar
Preparation
In mixing bowl combine flour, sugar, yeast, and salt, mix on low speed for one minute.

Add water and mix on low speed for one minute.

Combine butter and kneed until smooth and elastic, about 10-15 minutes at medium speed.

Cover dough with towel and let rising at a warm place until volume double size.

Punch the dough down and roll out the dough to from a large rectangle 12×8 inch. Cut out thin strips of dough along the top 2/5 part of the dough (lengthwise), Spread a thin layer of  custard filling or Candied mixed fruit over the remaining part. 



Roll up tightly, place it in a greased loaf pan, allow to rise for one hour.



Then bake at 200C degrees for 35 minutes.

HOMEMADE SRILANKAN ROASTED BREAD

Description

Roasted bread(Roast Paan) is a bread that is baked not as a whole loaf but in slices, which makes it easier to just peel off and eat. Super soft it is the perfect carrier to spicy curries.


Ingredients

300 Grams Plain Flour

12 Grams Butter

6 Grams Salt

6 Grams Yeaat

175 Ml Water

12 Grams Sugar

Preparation

In mixing bowl combine flour, sugar, yeast, and salt, mix on low speed for one minute.


Add water and mix on low speed for one minute.


Combine butter and kneed until smooth and elastic, about 10-15 minutes at medium speed.


Cover dough with towel and let rising at a warm place until volume double size.


Once the dough has doubled in size, knead again. (2-3 minutes) Then, separate the dough into 4 balls

and let them rest for 15 minutes in a flat oven pan.


Shape it into a ball and then flatten it, making sure the bottom is flat and the sides a little curved. Brush melted butter on both sides of the dough.


Place all the shaped dough balls in a baking tray.

Preheat the oven to 400°F. Once preheated, bake bread for 35 minutes.

After 35 minutes, take the bread tray out of the oven and separate the bread pieces while hot. Lay them on a flat oven tray and Brush melted butter on both sides of the dough.

Place the tray back in the oven until the tops turn golden brown, roughly 10 minutes.

Serve with curry. Enjoy. 

HOMEMADE TORTILLAS

      A tortilla is a thin, circular unleavened flatbread. 

                       
                    
              

INGREDIENTS 

To make thin tortillas:

    Wheat flour -250g

    Hot water - 325 ml

    Salt - 1 tsp

    Sunflower oil - 2 tablespoons

   Milk powder - 2 tablespoons 


    1. Add salt, sunflower oil and hot water to the flour and milk powder. Use a spoon to knead the dough. When it has cooled down a little, you can continue kneading the dough with your hands.

    2. Put the dough in a ball and let it rest for 20 minutes.

    3. Divide into 5_6 equal parts. Roll each piece into a thin cake.

    4. Fry in a dry skillet for 30-60 seconds on each side.

    5.let cool. Enjoy.

INGREDIENTS

2TABLE SPOONS OIL
1/4 BAKING SODA 


DESCRIPTION 

Mix the  flour, along with the ,OIL baking soda, salt and required water and keep it aside for about 20 mins. 


Heat the tawa and pour 1 ladle of batter and spread evenly in the tawa and pour little oil and once one side of the dosa is cooked, turn it on the other side and cook it till the dosa. Remove the dosa from tawa and repeat the step for rest of the batter
Serve the rice flour dosa with chutney.

INGREDIENTS 

150 GRAM RICE FLOUR
75 GRAM PLAIN FLOUR 
325 ML WATER 
1 LARGE EGG
1 1/2 TEA SPOONS SALT
1 1/2 TABLE SPOONS OIL

HOMEMADE FlAT BREAD

Description
Soft and very delicious.

Ingredients
½ pounds, 2-⅝ ounces, weight Plain Flour
1 teaspoon Yeast
1 teaspoon Sugar
1 teaspoon Salt
8 tablespoons, 2 teaspoons, 6 pinches Water
¾ ounces, weight Butter, Plus Additional To Grease The Bowl
Oil, To Lightly Grease Pan
Preparation
In a mixing bowl combine flour, yeast, sugar and salt. Mix 1 minute. Add water and butter. Knead until smooth and elastic, about 10 minutes.

Place in a greased (use butter) bowl. Cover the dough and let rise in warm place about 35 minutes.

After that punch the dough down and make 10 rounds balls. Cover the balls and allow to rise for 20 minutes.

Now take out each balls and roll into a disk using a rolling pin. The disks should be about 6 inches wide and 1/4 inch thick.

Cook in a frying pan very lightly greased with oil. Let both sides cook until light brown.

Serve hot with curry or your favorite dish.

HOMEMADE TOMATO BUNS

Everyone loves tomatoes! These buns are delicious and healthy. Try my recipe.






Ingredients

FOR THE DOUGH:

½ pounds, ⅞ ounces, weight Plain Flour

¼ ounces, weight Yeast

1 ounces, weight Sugar

½ teaspoons Salt To Taste

7 tablespoons, 1 teaspoon, 5-⅛ pinches Warm Water

1 whole Egg, Beaten, Divided Use

1 ounces, weight Butter, Softened

FOR THE FILLING:

1 Tablespoon Olive Oil

1 teaspoon Garlic, Chopped

1 Tablespoon Red Onion, Chopped

1-⅞ ounces, weight Boiled Potatoes Small Diced

3-⅝ ounces, weight Tomato, Diced

½ teaspoons Salt To Taste

¼ teaspoons Pepper

1 Tablespoon Sesame Seeds, For Garnish

Preparation

In a mixing bowl combine flour, yeast, sugar, and salt. Mix 1 minute. Next add water and half of the beaten egg. Mix. Add butter and mix until combined. Knead by hand until smooth and elastic, about 10 minutes.


Cover the dough and let rise in a warm place for about 30 minutes. After that, punch the dough down and make 5 round balls and allow them to rise for 10 minutes .


Now take out each ball and roll out with a rolling pin until you get a thin disk (diameter 6 inch, thickness 1/4 inch).


In a pan heat 1/2 tablespoon olive oil over medium high heat. Add garlic and mix it around until it’s softened. Next add onion, and the pre-boiled potato chunks. Mix until onion is softened and everything is heated through. Add tomato, pepper and salt. Mix well.


Now place a tablespoon full of filling mixture in the middle of each dough disk and fold the dough in half (folding one half over the other to make a half moon shape). Make 5 incisions in the edges of the dough with a sharp knife. (see photo – you are basically cutting in from the edge of the circle about 1/2 to 1 inch in, towards the flat side of the half moon – do this 5 times).


Place on a greased baking tray and allow to rise for 35 minutes. Next brush the remaining beaten egg over the top of the buns and sprinkle some sesame seeds on top.


Bake at 200 C for 20 minutes or until golden brown.


Serve hot.

Homemade Candied Orange Peel Bread

This bread is delicious! Don’t throw away orange peel. It’s a great snack. Try this bread recipe.






Ingredients

½ pounds, ⅞ ounces, weight Plain Flour

¼ ounces, weight Yeast

1 ounces, weight Sugar

½ teaspoons Salt To Taste

7 tablespoons, 1 teaspoon, 5-⅛ pinches Warm Water

1 whole Egg, Beaten, Divided In Half

1 ounces, weight Butter, Softened

3 Tablespoons Butter, Melted, For Brush

3-⅝ ounces, weight Candied Orange Peel

Preparation

In a mixing bowl combine flour, yeast, sugar, and salt. Mix 1 minute. Next add water and half of the beaten egg. Mix. Add butter and mix until combined. Knead by hand until smooth and elastic, about 10 minutes.


Cover the dough and let rise in a warm place for about 30 minutes. After that, punch the dough down and make 6 round balls and allow them to rise for 10 minutes .


Now take out each ball and roll the dough out into an oval shape using a rolling pin (dough thickness should be about 1/4 inch).


Next use a sharp knife or dough scraper to make 5 slits in the dough rounds. Do not cut all the way through to the edges – cut from the center of the disk both ways out toward the edge of the disk but not all the way to the edge. Now brush the surface of the dough with melted butter.


After that cut the candied orange peels into small pieces. Sprinkle some candied orange peel on the top of the dough. I used homemade candied orange peel – there are several recipes here on TastyKitchen – or you can purchase it. Roll the dough up into a log. Thin out both ends of the log. After that coil the log up into a snail shape and tuck the end under to to seal it.


Place on a greased baking tray and allow to rise for 10 minutes. Next brush the remaining beaten egg over the top of the bread.


Bake at 200 C for 20 minutes or until golden brown.

Homemade Baked Noodles

                       Very tasty.Try this recipe.
                        




  • 250 grams Egg Noodles
  • 2 Tablespoons Vegetable Oil
  • 1 teaspoon Ginger, Chopped
  • 1 teaspoon Garlic Chopped
  • 1 whole Onion Shredded
  • 100 grams Carrots, Shredded
  • 100 grams Cabbage, Shredded
  • 2 Tablespoons Bell Pepper Shredded
  • 1 Tablespoon Soy Sauce
  • 1-½ Tablespoon Tomato Sauce
  • ¼ teaspoons Pepper To Taste
  • 1 cube Vegetable Bouillon
  • 1 teaspoon Salt To Taste
  • 150 milliliters White Cream Sauce (Storebought Alfredo Or Other Will Do)
  • 100 grams Green Onion Stalks (the Greens, Cut In One-inch Pieces)
  • 100 grams Breadcrumbs

Directions

  1. Boil the noodles according to package instructions. When they are cooked, drain water and set aside.
  2. In a pan heat 2 tablespoons vegetable oil over medium high heat. Add ginger, garlic and onion. Saute for 2 minutes. Add carrot, cabbage and bell pepper. Cook 3 minutes longer. Add soy sauce, tomato sauce, pepper, vegetable bouillon cube and salt. Mix well.
  3. After that sauce starts to boil add the cooked noodles and mix well. After a few minutes of allowing the flavors to mingle together, remove from heat. Add green onion leaves and 75 ml white sauce. Mix well.
  4. Next take a round pan (8 inch diameter) and grease it with butter or oil.
  5. Now sprinkle breadcrumbs and put the noodles in greased pan. Press down the noodles. Pour 75 ml white cream sauce on noodles and sprinkle with additional breadcrumbs.
  6. Bake at 20 minutes at 200C.
  7. Serve hot. Enjoy.

Homemade Fancy Bread

  • FOR THE FILLING:
  • ½ Tablespoons Olive Oil -Filling
  • ½ teaspoons Garlic, Chopped
  • 1 Tablespoon Red Onion, Chopped
  • 2-⅔ ounces, weight Smoked Salmon, Crumbled
  • 1-⅞ ounces, weight Mashed Potatoes
  • 1-⅞ ounces, weight Tomato, Diced
  • 1-⅞ ounces, weight Green Bell Pepper, Diced
  • ¼ teaspoons Black Pepper
  • ⅞ ounces, weight Green Bell Pepper, Diced
  • ¼ teaspoons Salt To Taste
  • 4 whole Egg, Beaten
  • .
  • Directions

    1. In a mixing bowl combine flour, sugar, yeast, and salt, and mix on low speed for one minute.
    2. Add water and mix on low speed for one minute.
    3. Add in the butter and knead until smooth and elastic, about 10-15 minutes at medium speed.
    4. Cover the dough and let rise in a warm place for about 30 minutes. After that, punch the dough down and make a round ball and allow to rise for 10 minutes .
    5. In a pan heat 1/2 tablespoon olive oil over medium high heat, add garlic and mix until slightly softened. Next add onion, salmon, and prepared (or leftover) mashed potatoes. Mix until onion is softened and everything is heated through. Add tomato, bell pepper, black pepper and salt. Mix well and heat everything throug.
    6. Now take the ball of dough and roll out with a rolling pin until you get a large square that is about 1/8-inch thick. Using a 5 inch diameter round cutter, cut 6 dough rounds. Take a round and fold it in half. Make 2 incisions in the dough with a sharp knife – the incision should be in the shape of the half circle, about a half inch inside of the edge – but don’t cut all the way to the center of the circle or you’ll create a free floating piece of dough in the center – it should still be connected. Place on a greased baking tray. Unfold the dough and you’ll see your circle, with a partially cut out circle in the middle. Next shape the center piece of the dough into a bowl shape (it will hold the filling) and wrap the outside pieces of dough up around the dough to keep it sturdy (see photo). Allow dough to rise for 10 minutes.
    7. Now place one tablespoon of filling mixture in the middle of each dough ‘bowl’. Beat three eggs until light and frothy. Now pour some egg (about half an egg) into each dough bowl on top of the filling (but not on the crust). Whisk the fourth egg and brush it on top of the exposed surfaces of the dough.
    8. Bake the bread for about 25 minutes at 220C degrees or until golden brown.
    9. Serve hot with tomato sauce or green chutney. Enjoy.

Homemade String Hopper Sweet Rolls.(LAVARIYA)

INGREDIENTS

Coconut Pani Or Treacle50 ml
Cinnamon Powder0.13 tsp.
Sugar1 tsp.
Dessicated Coconut100g

FOR THE SWEET ROLLS

Steam Flour (See Below)250g
Salt1 tsp.
Boiling water
 
200 ml

1. To make the coconut mixture, in a thick-bottomed pan, put coconut pani, cinnamon and sugar and bring to boil (you need it to be around 100C degrees so use a thermometer).Then add the pani mixture to the dessicated coconut and mix well. Let cool.

2. In a steamer, steam plain flour for about 30 minutes. When cool, break up the flour and sift twice. Steam flour is also available in food shops and supermarkets.

3. Put the steam flour and salt into a bowl and slowly add the water. Mix quickly into a pliable dough.

4. Put a little of the dough into a string hopper mold and squeeze the mixture in a circular fashion onto a 7×7 piece of paper greased with butter or oil. It will look like a disk about 5 inches in diameter. Continue with the rest of the dough.

5. Now place the sweet coconut mixture in the middle of each disk and roll each up loosely. Transfer to a string hopper mat.

6. Place 2 mats in a steamer and steam over a pan of boiling water for about 5 minutes. When the string hopper sweet rolls are cooked, remove from the mats and place on a dish.

Serve hot or cool.Enjoy.

Homemade Kids Birthday Party Appetizer.

THE BASKET
Plain Flour100g
Salt To Taste0.25 tsp.
Butter, Chilled50g
Whole Egg Yolk0.5
Water Cooled50 ml

FOR THE FILLING

Olive Oil0.5 tbsp.
Garlic Chopped0.5 tsp.
Red Onion, Chopped1 tbsp.
Smoked Salmon, Crumbled50g
Mashed Potatoes25g
Pepper0.25 tsp.
Salt To Taste0.5 tsp.
Whole Egg0.5

FOR THE GARNISH

Potato, Peel And Boil50g
Butter25g
Salt0.5 tsp.
White Pepper
1 drop colouring
0.13



METHOD

1. Sift the flour. Place the flour and salt in a large bowl. Mix. Rub the butter into the flour with your fingertips until the mixture resembles breadcrumbs.


2. Next add approximately 1/2 of the egg yolk and the water. Mix well your hands. Try to work quickly.


3. Wrap the dough and chill for 10 -15 minutes.


4. Now take the dough and roll out into a 12 inch square that is about 1/8 inch thick, using a rolling pin. Cut it into a round shape (diameter 2 inch) using a pastry cutter or cookie cutter.


5. Put the pastry rounds into the greased mould (use butter or coking spray) and make sure the dough goes up the sides as well.Then trim off the excess pastry. Prick the base with a fork to prevent air bubbles.


6. In a pan heat 1/2 table spoon olive oil over medium high heat add garlic and mix. Next add onion, salmon, and mashed potatoes. Mix until onion is softened and everything is heated through. Add pepper and salt. Mix well.


7. Place your prepared filling in the pastry and beat the 1/2 egg. Brush the egg over the filling.


8. Bake about 20 minutes at 200 c degrees or until the crust is golden brown.


9. Remove from oven and let cool.


10. After that decorate with colored mashed potatoes. Take a potato. Peel and boil it until fork tender. Drain the water. Squash it. Add butter salt, white pepper and food coloring. Mix well. Put into a piping bag and pipe it on top of the filling, as I’ve done in the photo above.


11. The basket handle was made out of pastry dough. You can do this with the extra scraps of dough if you want.


Serve and enjoy
